On Radeon 8500 and Matrox Parhelia the water surfaces dont render correctly (using the current drivers at the time of writing April 29, 2003). This is a driver issue. Until new drivers have been released that solves this problem you can disable pixel shaders to minimize the problem....
...Go to your main Enclave folder
Find the environment.cfg
Open this file with your favorite text editor (I used notepad)
In the third line, under the BINK_SOUNDTRACK=1 add these two lines:
D3D8_ENABLEPIXELSHADERS=0
D3D8_ENABLEVERTEXSHADERS=0 ( - , )
Save and exit.
